cold strawberry oatmeal

Even if you're not the biggest fan of oatmeal or porridge, I can assure you there's a way for you to enjoy it in some way.
This cold strawberry oatmeal has the texture of a creamy pudding with natural fruit flavor and a hint of sweetness.

What you need:

1 cup/240 ml soy milk

1/2 cup quick cooking oats

1 tsp agave syrup

1/4 tsp salt

1 cup of frozen strawberries (or any other frozen berries)

Method:

1. In a small saucepan mix oats, soy milk, agave syrup and salt. Bring it to a simmer and cook for 5 minutes, stirring constantly. Let it cool for 10 minutes.

2. In a blender or food processor blend the frozen strawberries (or other fruits) with the cooked and cooled porridge.

3. Serve right away with fresh fruits, coconut flakes and hemp seeds or any other toppings you like.

You can also keep it in the fridge for up to 3 days in an air-tight container.
