Caramelized Onion & Sun-dried Tomato Galette

What you need:

Caramelized onions:

4 medium onions

2 tbsp olive oil

1 tsp salt

Cream filling:

1 cup of unsweetened soy yogurt

1/2 cup sunflower seed cream (1/2 cup soaked sunflower seeds blended with 1/2 cup water)

2 tbsp fresh mixed italian herbs (or 1 tbsp dried)

1/2 tsp salt

1/4 tsp freshly ground black pepper

4 sun-dried tomatoes in oil, chopped


Galette dough:

2 cups spelt flour

1/2 tsp baking powder

1/2 tsp salt

8 tbsp (80 ml) oil from a jar of sun-dried tomatoes

10 tbsp (100 ml) water


1. Pre-heat your oven to 200 C/400 F. 2.Start with caramelizing the onions. Cut all of them into 3 mm slices. Heat olive oil in a non-stick pan on medium-low heat, add onions and sprinkle with salt. Let it caramelize for 35-40 minutes, stirring every 5 minutes or so.

3. Prepare the dough by first mixing flour with salt and baking powder, then adding oil and water. You should get a fairly smooth dough. Let it rest while the onion is caramelizing.

4. For the cream filling simply mix all ingredients.

5. Once the onion is done, roll out the dough into a half centimeter thick circle, spread the cream onto it, leaving a 3 cm border on the edge. Add onions on top.

6. Fold the rim of the dough up and over the edge of the filling, as shown in the pictures.

7. Bake for 25 minutes and serve while still hot.
