Blueberry & Lemon Overnight Oats

- 1 cup rolled oats
- 1/4 cup chia seeds
- 1 tsp vanilla extract
- 1/2 cup canned coconut milk
- 3/4 cup water
- 1 tbsp maple/agave syrup
- 1 tbsp lemon juice
- 1 tsp lemon zest
- Fresh blueberries or blueberry jam
- In a mixing bowl mix oats, chia seeds, coconut milk, water, vanilla, maple syrup, lemon juice and zest.
- Pour the mixture into two jars, add some blueberries or jam and let it sit in the fridge overnight.
