Blueberry & Lemon Overnight Oats

  • 1 cup rolled oats
  • 1/4 cup chia seeds
  • 1 tsp vanilla extract
  • 1/2 cup canned coconut milk
  • 3/4 cup water
  • 1 tbsp maple/agave syrup
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • Fresh blueberries or blueberry jam


  1. In a mixing bowl mix oats, chia seeds, coconut milk, water, vanilla, maple syrup, lemon juice and zest.
  2. Pour the mixture into two jars, add some blueberries or jam and let it sit in the fridge overnight.
