Apple & coconut crumb bars

Ingredients:

Crumble:

  • 1 1/2 cups rolled oats
  • 1/2 cup coconut flakes
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 cup whole wheat flour
  • 2 tbsp coconut oil
  • 1/4 cup water
  • 2 tbsp brown sugar

Filling:

  • 3 cups cubed apples
  • 1 tbsp brown sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
Method:
  1. Preheat oven to 350 degrees F/175 degrees C.
  2. For the filling simmer the ingredients in a saucepan for 5 minutes, constantly stirring. Let it cool for room temperature.
  3. In a mixing bowl mix oats, coconut flakes, flour, vanilla, baking powder, coconut oil, brown sugar and 1/4 cup water.
  4. Save 1 cup worth of the crumbly mixture.
  5. Add 1/4 cup water to the rest and mix until it forms a dough.
  6. Press the dough evenly into a (13×9 inch/33×23 cm) baking dish lined with parchment paper.
  7. Pour in the apple filling and top with the crumble.
  8. Bake for 18 minutes or until golden brown.
  9. Serve it warm with some coffee.
